What Data We Collect
We collect only the personal data necessary to serve you well:
- Email address — when you sign up for our newsletter or place a preorder.
- Name and shipping address — when you place an order, so we can deliver your olive oil.
- Payment information — processed securely through our payment provider. We do not store your credit card details.
- Basic usage data — such as pages visited and referral source, to help us improve the website experience.
Why We Collect It
We use your data for the following purposes:
- Newsletter — to send you updates about new harvests, availability, and special offers (only with your explicit consent).
- Preorder notifications — to let you know when the next raccolta is available for preorder.
- Order processing — to fulfill your orders, process payments, and arrange delivery.
- Customer service — to respond to your questions or concerns.
Legal Basis for Processing
Under the General Data Protection Regulation (GDPR), we process your data on the following legal bases:
- Consent — for marketing communications such as our newsletter. You can withdraw your consent at any time.
- Contract performance — for processing and delivering your orders.
- Legitimate interest — for improving our website and services, and for fraud prevention.
- Legal obligation — for tax and accounting records as required by Dutch law.
Third-Party Processors
We work with a small number of trusted service providers who process data on our behalf, under strict data processing agreements:
- Vercel (San Francisco, USA) — website hosting and delivery. Data processed under EU-US Data Privacy Framework.
- Resend (USA) — transactional and marketing email delivery. Data processed under EU-US Data Privacy Framework.
- PostNL (Netherlands) — package delivery and shipment tracking.
We do not sell, rent, or share your personal data with third parties for their own marketing purposes.

- Newsletter subscribers — we keep your email address for as long as you remain subscribed. You can unsubscribe at any time.
- Order data — retained for 7 years after the transaction, as required by Dutch tax law.
- Website analytics — aggregated and anonymized, retained for up to 26 months.
Your Rights Under GDPR
As a resident of the European Union, you have the following rights regarding your personal data:
- Right of access — request a copy of the personal data we hold about you.
- Right to rectification — ask us to correct inaccurate or incomplete data.
- Right to erasure — request deletion of your personal data where there is no compelling reason for continued processing.
- Right to data portability — receive your data in a structured, commonly used format to transfer to another service.
- Right to restrict processing — ask us to limit how we use your data.
- Right to withdraw consent — for any processing based on consent, you may withdraw it at any time without affecting the lawfulness of prior processing.
- Right to lodge a complaint — you may file a complaint with the Dutch Data Protection Authority (Autoriteit Persoonsgegevens) at autoriteitpersoonsgegevens.nl.
To exercise any of these rights, contact us at ciao@oliopino.com. We will respond within 30 days.
Cookies
We use three categories of cookies. Necessary cookies are always active because the shop cannot run without them. Analytics and marketing cookies stay off until you say yes to them in the cookie banner.
- Necessary — these keep your cart between visits and keep our admin login secure. Because the site cannot function without them, they do not require consent.
- Analytics — Vercel Analytics and Google Analytics 4 show us how many people visit and which pages they read, and the Sentry error monitor reports technical faults so we can fix them. These only load after you opt in.
- Marketing — the Meta Pixel measures whether our ads on Facebook and Instagram lead to visits and orders. It also only loads after you opt in.
Your decision is stored in your browser under the name pino_consent_v1, together with the date and the version of the cookie policy you agreed to. If we ever change which cookies we use or how we group them, that version number goes up and the banner will ask you again.
You can revisit your choice at any time through the "Cookie settings" button in the footer. Turning a category off reloads the page once, so that scripts which were already running are fully removed.
